Raw Cow's Milk

Aged Artisan Gouda is made from raw milk only during the summer season, when cows are grazed on the open pastures of the peat meadows or polders of the Green Hart region, between the cities of Amsterdam, Rotterdam and Utrecht.
As a gouda matures, it develops a rich, savory flavor with notes of caramel or butterscotch. The cheese becomes hard, crumbly and has delicious little salty crystals throughout. Pair extra aged goudas with dessert wines and yeasty breads
