
What does Vacche Rosse mean? Literally, it means “red cows”, and this term refers to the cattle breed called Rosse Reggiane, common in the regions of Northern Italy. These cows have a reddish fur and differ from the Frisona, which is the main source of our renowned Parmigiano Reggiano PDO. The Vacche Rosse milk is better in that it contains more proteins and calcium and matures for at least 24 months.
