Traditional Taleggio, Washed crust, soft and tasty.Taleggio is appreciated the world over for its perfumed orange rind and yielding texture. The bacteria and yeast that give the cheese its distinctive colour, often dotted with species of mould such as Penicillium expansum and P. commune. The rind microflora helps to break down the paste, producing a velvety layer just beneath the rind, while the gentle, aromatic flavour is mild and fruity.
